Dietary Restriction Information

Do you have specific dietary requirements? We are here to help.

Whether you have food allergies, are gluten or lactose intolerant, are diabetic, or have other specific dietary needs due to medical or cultural reasons, our staff is here to help.

To assist us in accommodating your needs, please fill out the Individual Dietary Needs Form. If your dietary restrictions are related to a medically-diagnosed condition, Disability Resources requires a signed Physician Form be submitted to the Dining Services office in ASC 351.

Once the appropriate documentation is received, Andrea Eckert, Registered Dietitian for Dining Services will contact you to coordinate the next steps. Medically-diagnosed conditions require a consultation with a Dining Services staff member from your preferred dining venue. 


While Dining Services makes every attempt to accommodate students’ individualized dietary needs, please be aware that all Dining Services locations prepare items containing egg, fish, milk, peanuts, shellfish, soy, tree nuts and wheat. Questions about ingredients should be directed to a Dining Services Manager. In addition, there is always the possibility of cross-contact and suppliers and manufacturers may substitute or modify products at any time without notifying us. Individuals with food-related dietary concerns should be aware of these risks. It is the responsibility of individuals with food allergies or nutritional concerns to make the final judgment about whether a food item is appropriate for them.  The University of St. Thomas does not assume liability for adverse reactions to food consumed from any campus dining location.
