Today a Tamale Shop; Tomorrow the World

In just a decade, Enrique and Noelia Garcia have opened a cafe and a coffee shop in Mercado Central, a tamale restaurant in the Midtown Exchange, a catering business, and the first tamale factory in the state. Their tamales grace the frozen food section of nearly all major grocery chains in Minnesota, and they’re now considering other products that could nestle alongside them, even as they ponder other locations for new restaurants.

Part of the growth is due to the Opus College of Business, which sent business school students to La Loma to make the shop into a case study of cost analysis. That’s when the Garcias got a better view of true product costs and other expenses.
